Quick and Easy Chicken Enchiladas

For a busy mom like me, quick and easy recipes that can be whipped up in a flash and that is liked by all is  perfect.  This is not spicy (but you could add too it) and can be doubled for a family dinner.  This amount works well for my two sons.  This was made with the help of my 10 year old.  He’s the cook in the family.


Quick and Easy Chicken Enchiladas

2 cans of chunk chicken (12.5 oz cans)

1 can  mild  enchilada  sauce (10 oz)

1 cup (approx) shredded Mexican blend cheese

Small flour tortillas


Pour a little sauce at bottom of baking dish

Heat large skillet and mix two cans of chicken, large handful of cheese, and the majority of the sauce leaving enough to pour over the top of enchiladas (approx 1/4 c to top). Heat ingredients until cheese is melted.

Scoop enchilada mix into tortillas (approx 1/2 cup each) and roll up into baking dish. Should make approximately 4 to 5 enchiladas depending on how much you fill the tortilla with.  Top with remaining enchilada sauce and spread evenly and top with shredded cheese to cover.

Bake at 350°F for 10 minutes.

All done. I like to top mine with a bit of sour cream and chives/green onions.  Kids like it plain. Tapatio hot sauce is good to make it have a kick.

  2. it’s my boys favorite. You will probably want to at least double the recipe. Only takes 15 mins max with prep and cooking.
